Permit issued for brewery

Opening expected in mid-July

H.H. Hinder Brewing Company is expected to open on the east side of Waupaca by the middle of July.

The Waupaca Common Council approved a special use permit for 3H Brew when it met on Tuesday, May 15.

Located at 804 Churchill St. in the former Waupaca Family Center, the business will include a brewery and a taproom.

City ordinances require a special use permit for the brewing and distilling of alcohol.

“It’s been a pleasure working with Mike Stroik. We’re looking forward to it opening up here in the next couple of months,” said Brennan Kane, the city’s director of community and economic development.

In January, Stroik, along with Brandon Oltmann, presented their plan for the brewery to the city’s Plan Commission.

Stroik, an Amherst native, lives in Hartford and owns a construction business.

Oltmann lives in Amherst Junction and has been brewing beer for years.

He used to work at Central Waters Brewing and was one of its main brewers.

The Plan Commission recommended approval of a special use permit for the brewery and taproom.

The request for the permit did not go before the council until this month, because off-street shared parking agreements had to first be reached with adjacent property owners.

Approximately 35 parking stalls are required for the brewery/taproom, and there are about five stalls in front of the building.

H.H. Hinder Brewing Company will be located between the Waupaca School District’s maintenance building and the Waupaca Area Food Pantry.

Prior to January’s Plan Commission meeting, the city received a letter from the food pantry, saying it was willing to partner with the brewery and provide cross access parking.

The brewery has now reached an agreement with the school district as well.

In a May 7 letter, Carl Hayek, the school district’s business manager, said the district agrees to allow Stroik to use parking spaces at the maintenance building.

The district is being added as an additionally insured on Stroik’s insurance, and 3H Brew will be added as an additionally insured to the district’s insurance policy, he said.

The H.H. Hinder Brewing property, along with others in the area, was also recently rezoned from Light Industrial District to Neighborhood Business District.

The rezoning of the properties follows the city’s Comprehensive Plan and is a better reflection of the neighborhood’s current character.

H.H. Hinder Brewing Company will have its brewery in the back portion of the building, with the taproom in the front.

The brewery is expected to operate from 7 a.m. to 5 p.m. Monday through Saturday, with taproom hours of 3-11 p.m. Friday, noon to 11 p.m. Saturday and noon to 9 p.m. Sunday.

In addition to selling the beer they brew, they plan to have a limited menu in the beginning and to sell merchandise as well.

“We appreciate you are investing in the community,” said Mayor Brian Smith.

He said the Churchill Street corridor is in need of improvements.

“We’re working hard on the brewery,” said Stroik. “I think you will all be happy.”
